Banana Berry Omega Muffins

These muffins are low-fat and full of good stuff. These are good snacks before or after a round of golf. Or for that matter they're good anytime.

Ingredients: 1 1/2 C rolled oats, 1 C whole wheat flour, 1/2 C ground flaxseed, 1/2 C packed brown sugar, 1 tsp baking powder, 1 tsp baking soda, 1/2 tsp ground cinnamon, 3 bananas mashed, 1/2 C skim milk, 2 egg whites, 2 Tbsp applesauce, 1 tsp vanilla, 1/2 C berries(fresh or frozen berries, blueberry is the best)

Instructions:
1. Preheat oven to 400 F.
2. Prepare 10 muffin cup tins with nonstick spray.
3. In one bowl, mix oats, flour, sugar, baking powder, baking soda, flaxseed, and cinnamon. In a different bowl mix bananas, milk, egg whites, applesauce, and vanilla.
4. Combine liquid bowl into flour mixture and stir together.
5. Gently stir in blueberries.
6. Spoon batter into the muffin cups to about 3/4 full.
7. Bake for 22 minutes until golden brown.
8. Let cool 5 minutes, then remove from cups.

These muffins can be frozen to keep longer and have them readily available.
